A Big Life: Remake This Cheese
Plate
Go beyond the boring old cheese tray the
next time you have a get together. Here are some of Sissy's tips for
creating a cheese plate the way the professionals do:
- Select about five or six cheeses so the nuances, textures and
flavors of each one can be fully enjoyed and appreciated.
- If serving a flight before or after a meal, purchase two ounces of
each cheese per guest. If the cheese flight is the main course, do four
ounces per person.
- In general, the rule is to move from mild to strong, starting with
the mildest cheese at 6 o'clock on the cheese plate.
- Don't use a glue stick to affix the wrapping paper to your
candleholder. A glue stick will not provide you with the adhension you
need to ensure your paper stays in place.
- Serve the cheese at room temperature.
- Label your cheeses - create beautiful porcelain placeholders or use
popsicle sticks to identify your cheeses.
- Use different knives for each cheese so you don't mingle flavors and
tastes.
