A Big Life: Preparing the Perfect Pizza

Coffin and Kevin Spooner offer these tips for making the perfect pie for
the pizza lovers in Your Big Life.
- Let your homemade dough sit for one to three days. The more time you
let it sit, the more flavor it will have.
- Before putting dough down on any surface put some cornmeal or flour
down so the dough won't stick.
- Less is always more when it comes to sauce. Pizza sauce always cooks
faster than the crust. If you use too much sauce, it will create
bubbling and will boil in the oven.
- Use whole milk mozzarella cheese made from buffalo milk. It has a
better flavor and quality than mozzarella made with pasteurized cow's
milk.
- The thinner your pizza the less time you are going to need to cook
it. You will also need to cook it at a higher temperature than you would
with a thicker pie. Cook a thicker pizza longer and on a lower
temperature.
